Good Ol' fish and chips (the yuppie way)
« on: September 23, 2008, 02:14:45 PM »
for one person

200gr fillet of kingklip ( any nice non bony fish fillet will do really )
200gr flour
140ml bitter ale beer (castle milkstout etc.)
30ml white or brown vinegar
2 nice size potatoes
250ml cooking oil

1. mix flour, beer/ale, vinegar in a mixing bowl. it should be slightly thicker than pan cake batter. salt & pepper to taste.
2. pour cooking oil into a pot big enough for fish to fit in and heat up.
3. peel potatoes and cut into chips, boil untill soft. This will help it cook quicker in oil.
4. to test if oil is ready, drip some batter into the oil, you will know if it's hot enough or not.
5. when oil is ready, dust fish fillet with flour ( this will help batter stick ) and dip fish into the beer batter and straight into hot oil. Don't drop it in, the oil might cook over, so put it in slowly.
6. when the batter starts to turn darker in colour you can add the chips to the oil. the fish shoul take no longer than 5-8 minutes.
7. if you can find mushy peas, do yourself a faour and get some, good stuff!!
Going to Mtunzini on the 26th of Dec! WOOT! Rays, Skates, Guitarfish, Blacktips, Zambezi's ARRRRR, where does it stop!!! Simply cannot wait!
